Finding Comfort in a Simple Autumn Day in the Irish Countryside | Pumpkin Recipes & Homemade LipBalm

In this video I’m making pumpkin and apple butter, creamy pumpkin tagliatelle with smoked bacon, and a simple pumpkin and apple cake with a cinnamon topping. I’m also making rose hip lip balm, drying apples and preparing some homemade tea. Thank you so much for watching and for all your kind comments. And a special thank you to those of you who have joined the channel membership. Your support really does help me continue making these videos, and I appreciate it more than you know. I hope you enjoy spending this autumn day with me. 🎃 Pumpkin & Apple Butter * 1 kg pumpkin, peeled and cubed * 750 g Bramley apples, peeled, cored and chopped * 200–250 g brown sugar * 150 ml water or apple juice * 2 tsp ground cinnamon * ½ tsp ground ginger (optional) * ¼ tsp ground nutmeg * A small pinch of salt * 1 tbsp lemon juice 🍝 Creamy Pumpkin Tagliatelle with Smoked Bacon * 125 g tagliatelle * 1 cup pumpkin, diced * ⅓ onion, finely chopped * 2 garlic cloves * 125 g smoked bacon * 150 ml double cream * 1 tbsp fresh chopped parsley * 1 tbsp olive oil * Salt and pepper to taste 1. Cook the tagliatelle in salted boiling water according to the packet instructions. 2. Add the diced pumpkin to the pasta water for the final 5 minutes, or until tender. 3. Meanwhile, heat the olive oil in a frying pan and cook the onion, garlic and smoked bacon until the bacon is cooked and the onion has softened. 4. Drain the pasta and pumpkin, reserving a little cooking water. 5. Combine with the bacon mixture and add the double cream. 6. Stir gently over low heat until everything is coated in the sauce. Add a little pasta water if needed. 7. Finish with fresh parsley, salt and pepper. 🍎 Pumpkin & Apple Cinnamon Cake * 1 cup pumpkin purée * 2 eggs * ½ cup melted butter or vegetable oil * 240 g plain flour * 2 tsp baking powder * ½ tsp bicarbonate of soda * ½ cup sugar * 1 tbsp vanilla sugar * 1 tsp cinnamon * ¼ tsp ground nutmeg * ¼ tsp ground ginger * 1 apple, chopped For the cinnamon topping: * 50 g sugar * 1 tbsp butter * 1 tsp cinnamon 1. Preheat the oven to 180°C (350°F). Line a 25 × 11 cm loaf tin with baking paper. 2. In one bowl, combine the pumpkin purée, eggs and melted butter or oil. 3. In another bowl, mix the flour, baking powder, bicarbonate of soda, sugar, vanilla sugar and spices. 4. Combine the wet and dry ingredients, mixing only until incorporated. 5. Fold in the chopped apple. 6. Transfer the batter to the prepared tin. 7. Mix the topping ingredients together and sprinkle over the cake. 8. Bake for approximately 40 minutes, or until a skewer inserted into the centre comes out clean. 🌹 Rose Hip & Cocoa Lip Balm * 30 g prepared rose hip flesh, with seeds and irritating hairs removed * 70 g sweet almond oil * 17 g beeswax * 20 g shea butter * Up to 2 g finely sifted unsweetened cocoa powder * 4–5 drops vitamin E oil (optional) 1. Prepare the rose hips by removing the seeds and fine hairs. 2. Cover the prepared rose hips with sweet almond oil. 3. Gently infuse over very low heat for approximately 2 hours, without allowing the oil to simmer. Leave to infuse further as it cools. 4. Strain thoroughly through a fine sieve or muslin, followed by a coffee filter to remove any remaining particles. 5. Measure 70 g of the finished infused oil. Add the beeswax and shea butter. 6. Gently melt everything together using a double boiler. 7. Remove from the heat and stir in the vitamin E and a little sifted cocoa powder. 8. Pour into clean, completely dry containers and leave to set. I’ll add links here to the kitchen tools, jars and other things I’ve used, wherever I can find them.
